I've checked the weather today and it looks like we are expecting some wet weather over the next week or so. Phew!
Thank goodness for that, it's been so dry lately, I was starting to worry. Remember the saying:
"April showers, bring May flowers"
Things will really start to sprout up after this, it will seem like over night, I can't wait! Spring is my favourite time of year.
We'll be making nettle soup this weekend, another one of my favourites.
A few onions,
bit of garlic,
fried in butter
top up with some filtered water,
add some cubed potato
add a few handful of nettle heads
Be sure to cook for at least 10 minutes so the nettles lose their sting and then blend and serve! It is delicious and a great health boost.
